National Cookie Day – Miss Molly’s Funfetti Cookies

Happy #NationalCookieDay! Baking cookies is a favorite holiday tradition. Celebrate the season with this delicious recipe from Miss Molly’s Cafe & Pastry Shop.

Funfetti Cookies

2 cups unsalted butter, softened
2 ½ cups granulated sugar
½ cup brown sugar, packed
1 teaspoon lemon zest
2 eggs
2 teaspoons vanilla extract
5 ¾ cups all-purpose flour
1 teaspoon kosher salt
¾ cup rainbow sprinkles
½ cup turbinado sugar

 

Preheat the oven to 350 degrees. In a bowl combine cream butter, granulated and brown sugars and lemon zest until light fluffy. In a separate bowl, add eggs and vanilla; set aside. In a third bowl, combine flour, baking powder and salt; set aside. With your mixer on low speed, slowly add egg mixture to butter mixture until thoroughly combined. Scrape the sides of the bowl, then add flour mixture until well mixed. Stir in sprinkles. Shape the dough into 1 ½ inch balls. Lightly press dough balls to be about ½ inch thick. Sprinkle with turbinado sugar. Place on a parchment paper-lined baking sheet. Bake at 350 degrees for 12-15 minutes. 

Yield – about 5 dozen
